Koshihikari Rice
At Naori, we use Koshihikari rice from Toyama Prefecture, Japan. Prized for its natural sweetness, gentle aroma and delicate sheen, it is cultivated for balance and consistency. Lightly seasoned, it forms the quiet foundation of our sushi, supporting the fish, never overpowering it.
